At the in-store Baumkuchen Lab, MIYABI’S is a specialty shop where each cake is carefully baked one by one in a dedicated oven. Using carefully selected milk and fresh eggs, the batter—made with approximately 100 whole eggs each day—is baked in a custom oven where six rotating bars turn simultaneously. Watching the entire baking process unfold before your eyes is part of the unique experience that defines MIYABI’S craftsmanship.
Baumkuchen is known for its signature tree-ring layers, and MIYABI’S takes this to another level. The layers are remarkably thin, resulting in an exceptionally moist cake with a refined, delicate texture.
The process begins by forming a solid base with the first two layers. After that, the batter is carefully applied in around 16 stages, with the heat adjusted each time to achieve the perfect balance. To avoid burning and to bring out both softness and richness, each layer is baked with the artisan’s trained intuition and attention to detail.
The baking temperature ranges from 300 to 400°C (572–752°F), and the entire process—from preparing the batter to the finished cake—takes about one hour. Two to three times a day, the bakers stay by the oven for nearly an hour each time, devoting their full attention to crafting each Baumkuchen to perfection.
